My Go-To Easy Dinners (The Ones I Make On Repeat)

I don’t know what it is about figuring out what to do with chicken or beef every single night of my life, but it’s completely exhausting. Planning dinner (and then actually making it) seems like too much sometimes. And honestly, it shouldn’t feel like a chore.

These are my go-to easy dinner options. The kind of weeknight meals I make on repeat, so dinner’s already decided. They’re simple, reliable, and they get eaten.

A lot of these are the same meals you’ll see in what we eat in a week, just pulled together with a few other tried-and-true favorites. Everything’s here in one place so you’re not clicking around looking for it (you can thank me later, wink).

What Makes This Work (For Me)

Most of these meals and recipes are built around things I already have on hand, which is a big part of why I come back to them every week. I don’t have to plan out complicated meals, I’m just pulling from the same basic ingredients in different ways. And that’s very freeing.

I also repeat meals a lot more than I used to (like a lot). It took me a long time to accept that not every dinner needs to be new and exciting, and truthfully, the ones I make the most often are the ones we love the most. It’s that simple.

This is the one I make when I have zero energy for dinner. It’s easy, I almost always have what I need, and it somehow always sounds good.

This feels a little more put together than it actually is. It’s one of those dinners that looks like you tried, even if you didn’t.

Inside-out stuffed peppers

Everything I like about stuffed peppers, just without the extra steps. One pan, simple, and good enough for leftovers.

Old-fashioned beef and noodles

This is one of those meals that just stays in rotation all year long here. It’s simple, filling, and it’s ready fast.

Teriyaki chicken rice bowls

By the end of the week, I’m usually leaning toward something quick and flexible. This is one of those meals that can go a lot of different ways depending on what I have laying around.

This is a “just make something and be done with it” kind of dinner. It’s easy, it feeds everyone, and no one complains.

Old-fashioned chicken and rice

This is probably as basic as it gets around here, but it’s also one of the most flavorful. I make it all the time.

Everything goes on one pan, which is usually the goal. It’s easy, low effort, and a good way to use whatever veggie I already have in the fridge.

One Final Note

These are the meals I come back to most and always keep stocked. That way, there’s never a night where I’m standing in the kitchen staring blankly into the fridge, waiting for an idea to come to me. I already have one (or 10, haha).
