Peanut Butter Chocolate Crunch Bars

These quick three ingredient peanut butter chocolate crunch bars are the perfect homemade candy!

Simple three ingredient peanut butter chocolate crunch bars! These bars are low in sugar and high in protein.We’ve had so much happening this month that it seems like I blinked and the month is almost over; Halloween and Mad’s birthday are only a week away now! And, I haven’t done a single thing to prepare for either one (insert shocked face here). I know, I’m really ashamed of myself – I need to get moving!

The weather is also ‘starting’ to change here and the (subtle) shift in the weather has Mad itching to bake. She’s been bugging me to make some festive treats (and I can totally relate!). I managed to find a few free minutes to make these quick and easy peanut butter chocolate crunch bars with her this weekend and boy were they a hit!

You only need three simple ingredients to make these homemade crunch bars; chocolate chips, peanut butter, and rice cereal. We used brown rice puffs, milk chocolate chips, and natural peanut butter, but you could use any variety of these ingredients that you have on-hand.

The process to make these peanut butter chocolate crunch bars is super simple; you start by melting the chocolate chips (either in the microwave – yes, this is what we did or in a double broiler if you’re fancy). Then you add the peanut butter and keep stirring it until it’s completely melted and smooth.

Lastly, you fold in the rice puffs and continue stirring until they are all covered in the chocolate and peanut butter. Then you just pour the whole shebang into a prepared 8 x 8  or 9 x 9 pan, spread it out evenly, and pop it in the freezer to harden.

After a few minutes of patiently (or not so patiently, if you’re like Mad) waiting, you’ll have the perfect homemade peanut butter chocolate crunch bars of your very own! Just slice them up into as many pieces as you’d like and snack away.

If you end up with some leftover, which may happen, just store them in an airtight container in the fridge to keep them from getting too soft. They are kind of melty, depending on the type of chocolate and/or peanut butter you use, so keep that in mind.

Quick and easy three ingredient peanut butter chocolate crunch bars.

Ingredients
  • 1 cup milk chocolate chips
  • 3/4 cup natural peanut butter
  • 1 cup brown rice puffs
Instructions
In the microwave:
  • Line an 8 x 8 or 9 x 9 square pan with parchment paper or aluminum foil.
  • In a medium size bowl, microwave chocolate chips on high heat for 1 minute and then stir.
  • Continue microwaving in 30 second intervals until completely melted.
  • Add peanut butter and mix well.
  • Gently fold in brown rice puffs.
  • Pour mixture into lined pan and place in the freezer for 30 minutes.
  • Remove from freezer, lift from pan, and slice into 16 squares.
  • Store in an airtight container in the fridge for up to 1 week or freeze.
In the double broiler:
  • Line an 8 x 8 or 9 x 9 square pan with parchment paper or aluminum foil.
  • In a medium size double broiler, slowly melt chocolate chips over medium heat until smooth and turn heat off.
  • Stir in peanut butter until smooth.
  • Fold in brown rice puffs.
  • Pour mixture into lined pan and place in the freezer for 30 minutes.
  • Remove from freezer, lift from pan, and slice into 16 squares.
  • Store in an airtight container in the fridge for up to 1 week or freeze.
