Chewy Oatmeal Chocolate Chip Cookies
An easy, one-bowl recipe for delicious homemade chewy oatmeal chocolate chip cookies!
- 1/2 cup unsalted butter, room temperature
- 1/2 cup brown sugar, packed
- 1/4 cup sugar
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 2 tsp cornstarch
- 1 egg
- 1 tsp vanilla extract
- 1 TBS molasses
- 1 tsp cinnamon
- 3/4 cup flour
- 1-1/2 cups rolled oats
- 1 cup chocolate chips
Preheat oven to 350 degrees and line baking sheets with parchment paper.
In a large bowl, cream butter, brown sugar, and sugar together until smooth.
Stir in baking soda, sea salt, and cornstarch and mix fully.
Add egg, vanilla extract, and molasses and stir.
Add cinnamon and stir.
Add flour and stir to combine.
Fold in rolled oats.
Fold in chocolate chips.
Using a 1.5 TBS cookie scoop, scoop dough onto prepared baking sheets, 2 inches apart. Bake for 12 minutes, rotating halfway through.
Let cookies cool on the pan for 5-10 minutes before transferring to a wire rack. Store in an airtight container for up to 1 week or freeze.
*Use a completely cool baking sheet to bake cookies.
**The cookies will be too fragile to move right out of the oven; allow them to sit on the baking sheet for up to 10 minutes before moving them to a wire rack.
