Inspired Living: My Salad

Happy new week, my friend! Monday morning seems like a great time to talk about food, doesn’t it? Summertime is my favorite “healthy eating” time of year. It’s so hot here and almost nothing sounds good, so it’s easy to choose my favorite light, healthy foods instead of all the warm comfort foods of fall and winter (which I also love, a lot).

I tend to go in cycles when it comes to tracking my food, mostly for my mental health and happiness, but I can almost guarantee you that I’ll be tracking during the summertime – it’s just the way it works out for me.

And when I’m “on” my food, I’m ON my food, if you know what I mean. There’s literally only one thing I crave for lunch most days during the summer and I’m going to share it with you today, because it’s so good! It’s my favorite (filling and nutritious) everyday lunch salad.

This little guy takes only minutes to throw together, has just a few simple ingredients, and is bursting with summer flavors. I also love that it keeps me full for hours, which is one of my favorite qualities in a lunch, haha. Give it a try and let me know what you think.

    Ingredients

    • 2 big handfuls of spinach (or leafy green of choice)
    • 2 hard boiled eggs
    • 3 large strawberries
    • 1/4 cucumber
    • Red onion (to taste – I love it, so I use a lot, haha)
    • Italian Avocado Oil Dressing (I love the one from Primal Kitchen) or any vinaigrette style dressing

    Instructions

    1. Rough chop spinach and place in a medium size bowl.
    2. Chop hard boiled eggs, strawberries, cucumber, and red onion and add to the bowl.
    3. Top with one serving of salad dressing, toss well, and enjoy.
