Inspired Living: Pancakes
What are you up to this weekend? Bubba and I are on our first solo trip together. It’s his mama’s birthday weekend and she’s celebrating with friends tonight, so he and I are taking on Big Forest by ourselves until tomorrow!
We made the 90 minute drive without any major incidents and even hit up Wal-Mart once we got here for a few things. He’s really enjoying riding in his stroller these days – he has bad FOMO and has to see what’s going on all the time (and he’s real nosy). Maybe we’ll visit the farmers market too, we’ll see how our night goes.
Also, I stumbled across a recipe for protein pancakes this week that only has a few wholesome ingredients (and no protein powder) and they’re really good (honestly, I ate all 6 in a day). I thought you might like them too. Here’s the (super easy) recipe – just in time for the weekend. Try them out and let me know what you think. Hope you have a great weekend, my friend.

Ingredients
- 1/2 cup rolled oats (50g)
- 1/2 cup low-fat cottage cheese (110g)
- 1 egg
- 1/4 cup egg whites (62g)
- 1/2 tsp vanilla extract
- 1-1/2 tsp baking powder
- 1/8 tsp sea salt
Instructions
- Add all ingredients to blender and blend until smooth (I used the cup of my immersion blender and mixed it with my stick blender – worked great).
- Let batter rest for 5+ minutes to thicken.
- Pour onto a greased griddle and cook until bubbles form, then flip and finish cooking.
- Top with greek yogurt, honey, nuts, maple syrup, jam, or chopped fruit and enjoy.
This recipe makes 6 large pancakes and the macros are as follows:
