Classic Chewy Oatmeal Raisin Cookies

Is there anything better than a classic chewy oatmeal raisin cookie?
It was only in my older years that I developed an appreciation for the oatmeal cookie. As a kid, they were my absolute last choice when it came to cookies. In fact, I thought they were nasty and I never really did like raisins.
The older I got though, the more I grew to love anything oatmeal, especially these classic chewy oatmeal raisin cookies! True to this blog, this is an easy recipe and I bet you have all of the ingredients on-hand right now and it only makes about 12 big cookies or 18 1 TBS size cookies.
Let me tell you a few things that make these classic chewy oatmeal raisin cookies the best. First of all, they have all brown sugar, no white stuff in these babies. And because of that, they’re super duper chewy and not overly sweet. They are also loaded with oats, which adds another level of chewiness as well as great texture. They’re the perfect quick sweet treat!

Classic Chewy Oatmeal Raisin Cookies
ingredients
- 1/4 cup unsalted butter
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp baking soda
- 3/4 cup rolled oats
- 1¼ cup flour
- 1/2 cup raisins
INSTRUCTIONS
- Preheat oven to 350 degrees and line baking sheets with parchment paper.
- In a medium bowl cream butter and brown sugar until smooth.
- Add egg and mix well
- Stir in vanilla extract.
- Add salt, cinnamon, and baking soda and stir to combine.
- Stir in oats and mix evenly.
- Add flour and stir until fully combined.
- Fold in raisins.
- Using a 1 TBS cookie scoop, scoop dough and place on baking sheets 2 inches apart.
- Bake for 10-11 minutes until golden brown on the edges.
- Cool on a wire rack.

These turned out great! Made them a bit too thick, but the taste is amazing! I added a tsp on cinnamon and a full cup of raisins, otherwise followed exactly
Awesome!! I have done that before too (made them too thick, oops!), but I love the addition of the raisins! I didn’t care for them AT ALL as a kid, but now is a whole different story! 🙂
Just made these and they are very dry and didn’t flatten out in the oven as they usually do. Perhaps they need more butter than the recipe calls for.
