Classic Chewy Oatmeal Raisin Cookies

ingredients
 
 

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp baking soda
  • 3/4 cup rolled oats
  • cup flour
  • 1/2 cup raisins

INSTRUCTIONS

  • Preheat oven to 350 degrees and line baking sheets with parchment paper.
  • In a medium bowl cream butter and brown sugar until smooth.
  • Add egg and mix well
  • Stir in vanilla extract.
  • Add salt, cinnamon, and baking soda and stir to combine.
  • Stir in oats and mix evenly.
  • Add flour and stir until fully combined.
  • Fold in raisins.
  • Using a 1 TBS cookie scoop, scoop dough and place on baking sheets 2 inches apart.
  • Bake for 10-11 minutes until golden brown on the edges.
  • Cool on a wire rack.

  4. These turned out great! Made them a bit too thick, but the taste is amazing! I added a tsp on cinnamon and a full cup of raisins, otherwise followed exactly5 stars

    1. Awesome!! I have done that before too (made them too thick, oops!), but I love the addition of the raisins! I didn’t care for them AT ALL as a kid, but now is a whole different story! 🙂

  5. Just made these and they are very dry and didn’t flatten out in the oven as they usually do. Perhaps they need more butter than the recipe calls for.
